Carbonara Pasta

We created this delicious Alfredo recipe with the help of executive chef and Alaska expert Mark Stevens, owner of Stevens and Stevens Deli in Louisville, Kentucky. An Italian classic, this simple dish combines an artisan pasta with a garlic infused creamy alfredo sauce, air-dried peas, batons of Woodland Farm apple-wood smoked bacon, and grated parm. Click.

Carbonara Pasta

MINIMUM EQUIPMENT: 2 pots or 1 pot and a skillet, stove, serving spoon or spatula, food bowl.

MEAL PREPARATION

  1. Boil 18 oz. (1 quart) of water. If you are cooking mutiple servings, boil more water.
  2. Add the dried peas and garlic to a bowl, pot, or your reusable food bag. Add just enough boiling water to cover the dry ingredients.  Stir thoroughly, cover, and set aside for at least 12 minutes.
  3. You might need to add a little more water to your pot. Bring water back to a boil, add noodles, and cook until tender (10-12 minutes). Drain and set aside.  
  4. Heat bacon in saucepan. 
  5. Add powdered Alfredo sauce and 3 oz. of water PER SERVING into the saucepan. Add peas and garlic.  Bring to a boil, stirring constantly. Remove from heat and stir occasionally, until thickened - about 3 minutes.
  6. Combine Alfredo sauce with pasta and stir until pasta is completely coated.  Top with Parmesan cheese and serve.

One Pot Method: 1 Serving

  1. Boil 18 oz. of water.
  2. Once your water is at a rolling boil, add all your ingredients to the pot. Save the Parm cheese as a topper to your finished meal
  3. Continue boiling all ingredients over med-high heat for 10-12 minutes. Stir often.
  4. Top with Parm Cheese and serve.
